Pomegranate Quinoa Salad
Salad Base
1 Cup of cooked quinoa
1 Cup of Pomegranate Seeds
1 Orange slices and peeled
1/2 cup of sliced almonds
2 cups of chopped kale
2 TBSP Funk It Seeds (per serving)
Dressing
2 tbsp olive oil
1/4 cup balsamic vinegar
1 lemon juiced
1 glove fresh garlic
Fresh parsley
Salt & pepper to taste
Directions:
- Cook Quinoa as directed on package & then let cool
- Chop and peel (almonds, kale, orange)
- Toss in a large bowl
- Combine dressing in a separate bowl.
- Toss salad & dressing together
- Top with Funk It Seeds & Enjoy
